Banana Pancakes

Banana pancakes can be made two different ways, depending on what form of the banana you like.  You can follow the strawberry pancakes recipe and replace the sliced strawberries with sliced bananas.  Add them to the pancakes directly on the pan instead of in the batter because they will get squashed and bruised if you add them to the batter.  If you want, you can do half and half for strawberry banana pancakes. For another banana pancakes variation, you can try this recipe.  They are made by mashing the banana beforehand, so they are more like banana bread.  Enjoy! 

Banana Pancakes Ingredients 

1 ¼ cup flour

1 tbsp, sugar

2 tsp. baking powder

1/4 tsp. salt

1 beaten egg

1 ¼ cup milk

2 tbsp. melted butter

2 ripe bananas, mashed

  1. Mix together the flour, sugar, baking powder, and salt.  Stir with a spoon until evenly combined.
  2. In a separate bowl, mix together the egg, milk, butter, and mashed bananas.  Mix well.  Pour the wet ingredients over the dry ingredients.
  3. Carefully mix all ingredients together, being careful not to over-beat.
  4. Heat a griddle or pan to medium high heat and grease lightly with oil or butter.  Pour about ¼ cups of batter onto the pan and let cook for 1 to 2 minutes or until golden brown and then flip. 
  5. When both sides are golden brown, remove from pan and serve with syrup.
