Oatmeal Pancakes
Pancakes make a great breakfast, especially on a slow weekend, but they aren’t exactly known for being healthy. One way to up the healthy quotient of your pancakes is to make oatmeal pancakes. Oatmeal adds fiber and other healthy qualities. Even if you don’t care about being healthier, oatmeal pancakes are delicious, too.
Oatmeal pancakes are easy to make due to the simple recipe to follow. Try this recipe out and see if you like them. You just might enjoy them even more than regular pancakes!
Ingredients:
1/3 cup oatmeal
2/3 cup flour
1 tbsp. sugar
1/4 tsp. salt
Dash of cinnamon
1/3 cup milk
1 egg, lightly beaten
1 tbsp. vegetable oil
2/3 cup water
Instructions:
1. In a bowl, mix together the oatmeal, flour, sugar salt, and cinnamon. Stir all the ingredients until the are well combined.
2. In a separate bowl, mix together the milk, egg, oil, and water. Mix it together thoroughly.
3. Slowly pour the wet ingredients into the dry ingredients. Mix it gently until you get a smooth batter. Do not over-beat the batter or you will create tough pancakes.
4. Heat a griddle to high heat and lightly grease it with vegetable oil or butter. Pour the batter on the hot griddle to form pancakes. When tiny bubbles form along the top, flip them over and cook until golden brown.
You can serve these pancakes with traditional butter and syrup or whatever toppings you desire. Brown sugar sprinkled on top adds great flavor to the oatmeal. You can top it with fruit, preserves, whipped cream, or anything you’d like.
You can also add things to the batter such as blueberries and other great treats. Experiment with what you like and see what you get.
