Potato Pancakes
It might sound a little weird, potato pancakes, mashed potato pancakes, etc. As you might have guessed, potato pancakes aren’t like regular pancakes. You don’t add baking powder, nor do you dress potato pancakes up with syrup. Potato pancakes are just like hash browns, except they are intact.
Here I will give you a good potato pancake recipe that is very simple to make. They are more simple to make than traditional pancakes, but it can be tedious, depending on how you decide to make them. Mashed potato pancakes are actually a little different. I will give you the variation with those as well.
Potato pancake recipe
Ingredients:
5 potatoes
1 egg, slightly beaten
¼ cup flour
2 tbsp. grated onion
salt and pepper
butter
- Cube the potatoes and put them into a food processor. Grate until it is chopped, but not pureed. You can also grate them by hand or use a grater attachment on the food processor. I would recommend you grate them for best results.
- The onion can be grated as well, or you could add about half of a small onion in with the potatoes when you process them.
- Put the potatoes in a bowl and add the egg, flour, onion, and a pinch of salt and pepper to taste.
- Mix it all together well. Form them into patties about the size of pancakes, or a little smaller.
- Turn on the stove to medium high heat and put about 2 to 3 Tbsp. of butter in a skillet and melt the butter.
- When the pan is hot, place the patties in the pan and cook on each side for about 5 to 10 minutes until both sides are golden brown. Add more butter as necessary so that they don’t stick and so that they brown nicely.
