Strawberry Pancakes

Strawberry pancakes are another uncommon type of pancake.  I’ve seen bottles of strawberry syrup for pancakes, and I’ve seen pancakes topped with strawberries, so why not make strawberry pancakes?

This recipe is great to make in the springtime and summer when strawberries are their freshest.  Top with syrup or whipped cream and enjoy your strawberry pancakes!

Ingredients

1 ¼ cups flour2 tsp. baking powder
1/4 c. sugar
1/2 tsp. salt
1 c. milk
2 tbsp. melted butter
1 egg
1 c. sliced strawberries
 

  1. In a bowl, stir together the flour, baking powder, sugar, and salt.  Stir until well combined.
  2. In a separate bowl, stir together the milk, melted butter, and egg.  Mix well and then stir into the dry ingredients without over-mixing.
  3. Fold in the strawberries.
  4. Heat a pan or skillet to medium high heat and lightly grease with butter or oil. 
  5. Drop about ¼ cup amount of batter onto the pan and let cook for about 2 to 3 minutes.  Turn when the batter starts to bubble and cook for about another minute or 2 on the other side.
  6. Pancakes will be golden brown when finished.  Serve hot.

Add extra strawberries on top for even more berry flavor!
