Sweet potato pancakes

Sweet potato pancakes can be made just like regular pancakes.  Generally, you won’t eat them with cheese and ketchup, but you can still eat them as a side with dinner.  In fact, that is probably your best bet.  Think about them like the side dish for thanksgiving. 

The best thing about sweet potato pancakes is that they taste great and sweet and they are nutritious.  You can’t go wrong with that!

Sweet Potato Pancakes 

Ingredients:

1 ¾ cups flour

1 tbsp. baking powder

1 tsp. salt

½ tsp. nutmeg

2 large or three medium sweet potatoes

2 beaten eggs

1 ½ cups milk

¼ cups melted butter

  1. Peel the sweet potatoes and cube them.  Add them to a pot of boiling water and cook them for about 10 to 12 minutes until tender.  Drain and mash with a hand masher or in a food processor.  Set aside.
  2. Mix the flour, baking soda, salt, and nutmeg in a bowl.  In another bowl, mix the remaining ingredients.  Make sure the potatoes aren’t too hot that they will quickly cook the eggs.
  3. Add the wet ingredients to the dry ingredients stirring enough to combine, but be careful not to over-beat them.
  4. Grease a skillet with vegetable oil or butter and heat it to medium hot.  Drop large tablespoons of batter onto the pan and flatten out slightly if necessary.
  5. After a minute, turn and brown on the other side for 1 or 2 minutes more.  Your sweet potato pancakes should be slightly golden brown.

You can serve these pancakes as a side for just about any meal such as with chicken, turkey, steak, or anything you’d like!  Top your sweet potato pancakes with butter or sprinkle with marshmallows for a sweet addition.
